Healthy Vegetarian Recipes - Pumpkin Curry

Serves 4


Ingredients

1 large onion

511g pumpkin

397g green beands

1cm piece fresh root ginger

1 garlic clove

Low calorie cooking spray

2 tbsp mild curry powder

400g chopped tomatoes

Salt and Freshly ground black pepper

Steamed rice to serve


Method


1. Prepare the ingredients. Peel and thinly slice the onion. Peel the pumpkin and cut into generous bite size cubes. Top and tail the green beans and cut in half. Finely grate the ginger and garlic.

2. Spray a large, non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the onion and stir-fry for 2-3 minutes. Add the pumpkin, ginger, garlic, curry powder, and tomatoes. Stir fry over a high heat for 2-3 minutes.

3. Stir in 57ml water and bring to the boil. Reduce the heat to low, cover and simmer gently for 8-10 minutes, or until the pumpkin is just tender.

4. Add the green beans and mix well. Cook for a further 4-5 minutes. Season well and remove from the heat. Serve with steamed rice.
