Healthy Vegetarian Recipes - Luxury Frittata

Serves 4


Ingredients

1 red onion

1 red pepper

1 orange pepper

1 green pepper

1 courgette

113g baby new potatoes

A sprig of rosemary

Low calorie cooking spray

6 large eggs

1 tbsp semi-skimmed milk

Salt and Freshly ground black pepper

14g Parmesan cheese


Method

1. Preheat the oven to 200c/400f/Gas 6. Peel and slice the onion, deseed and dice the peppers and dice the courgette.

2. Chop the potatoes into bite-sized chunks and par-boil for 4-5 minutes. Drain and place on a baking tray with the vegetables and rosemary. Spray with low calorie cooking spray and roast for 20 minutes

3. Beat together the eggs and milk, and season well. Spray a frying pan with low calorie cooking spray, add the baked vegetable mixture and pour over the eggs and milk. Cook for 5 minutes, or until the base has just set. Scatter over the Parmesan and place under a hot grill until the top is set and golden.
