Healthy Vegetarian Recipes - Guacamole

Serves 4

Ingredients

4 ripe avocados
a handful of finely chopped onion
a handful of finely chopped tomato
juice of 1 and half limes
a handful of freshly chopped coriander

Method

1. Remove the flesh and stone's from the avocados. Add the lime juice. Mash the avocados with a potato masher.

2. Add the onion, tomato and coriander and mix well. Place in the fridge for 20 minutes. Serve.
