Healthy Vegetarian Recipes - Breakfast Muffins

Ingredients


75g wholemeal flour

115g plain flour

1 tbsp baking powder

65g muesli

2 tbsp chopped dates

2 tbsp soft brown sugar

1 egg white, whisked

150ml skimmed milk

2 tbsp polyunsaturated margarine, melted


Method


1. Place the flours, baking powder, muesli, dates and brown sugar in a bowl. In a seperate bowl, mix together the egg white, milk and margarine. Add to the dry ingredients all at once. Stir gently

2. Spoon the mixture into eight muffin cases to two-thirds full. Bake in the oven at 220c/425f/Gas 7 for 20-25 minutes or until risen and golden. Serve warm.
